A Culinary Immersion Hosted by Chef Mads Refslund

October 9 – October 12, 2020

Enjoy a long weekend this fall in celebration of the culinary arts, the healing power of plants and the abundance of the East End. Hosted by our acclaimed chef Mads Refslund, this three-night, all-inclusive retreat program will nourish the mind and body.

The Shou Sugi Ban House culinary philosophy is born from the belief that true health is grounded in nature and food is medicine. Developed with Michelin-starred chef Mads Refslund, combining his no-waste philosophy with the property’s guiding principles of wellness and sustainability- we have created a balanced menu that changes with the season. Our Culinary Immersion retreat will introduce you to the finest locally sourced, organic foods and wholesome workshops, based on seasonal collaborations with local growers and purveyors and our resident nutritionist.

Workshop Descriptions:

Cacao Ceremony: Enjoy a communal gathering at our outdoor fire circle. Used as a tool to lift the spirits, we begin our retreat with this ancient ritual tradition.

Farm Foraging Excursion: Explore a local farm to understand Long Island’s agriculture landscape and enjoy a hands-on experience gathering your own produce that will be used for your lunch.

Whole Foods for Brain Health: In this lecture we dive deep into how the brain functions and what influences its health. Explore digestion, blood sugar regulation, physical activity, sleep and stress. Additionally, herbs, foods, and beverages that both support and hinder brain function will be discussed. Walk away with a deeper understanding of how to eat and live for a stronger, sharper, and more adaptive brain.

Yoga Nidra with Gong: A deeply relaxing full-body meditation to prepare you for sleep.

Oyster Farm Excursion with Picnic Lunch: Enjoy another interactive experience, this time at sea. Learn the processes of oyster farming, a practice dating back to the Romans in the 1st century BC. Sample fresh oysters as part of your picnic lunch on board the oyster barge.

Tea as Medicine: Learn the many ways in which tea can be used to promote good health. Taste varieties and understand their medicinal uses.
